Yield: 2 Servings
Ingredients: 2 tsp olive oil 2 medium zucchini (500g), cut into 1cm coins and halved 2 garlic cloves, minced (about 1 1/2 tsp) 1/2 tsp salt + pepper to taste 1 1/2 tsp red wine vinegar or lemon juice etc.
Instructions:
Step number one. Add the olive oil to a large pan over medium to high heat. When hot, add in enough zucchini slices so a single layer covers the pan. Cook until the bottom side is golden brown, then turn the slices over and again cook until golden. Remove the zucchini from the pan and do the same with the remaining slices. Add an extra splash of olive oil if needed.
And now, When both sides are nearly golden on the second batch, add garlic and cook for a further minute. Add the first lot back to the pan and season with salt and pepper. Add the red wine vinegar and herbs if you’re using them, to the pan before serving.
